Sheet Pan Chicken with Roasted Vegetables
Ingredients:
- 4 bone-in chicken thighs
- 1 lb baby potatoes, halved
- 1 cup baby carrots
- 1 red bell pepper, chopped
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- Fresh rosemary or thyme (optional)
Instructions:
- Preheat oven to 400°F (200°C).
- Toss potatoes, carrots, and bell pepper with 1 tbsp olive oil, garlic powder, paprika, salt, and pepper in a bowl.
- Spread vegetables on a baking sheet.
- Rub chicken with remaining oil, salt, and pepper; place on vegetables.
- Bake 35-40 min until chicken is cooked and vegetables tender.
- Garnish with herbs and serve.
Easy Rigatoni with Turkey Sausage
Ingredients:
- 12 oz rigatoni pasta
- 1 lb turkey sausage, casings removed
- 1 medium zucchini, chopped
- 2 cups fresh spinach
- 1 jar (24 oz) marinara sauce
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Grated Parmesan cheese to serve
Instructions:
- Cook rigatoni as per package. Drain and set aside.
- Brown turkey sausage in skillet, breaking up meat.
- Add garlic and zucchini, cook 3-4 min till tender.
- Stir in marinara and spinach; cook until spinach wilts.
- Toss pasta in skillet; season with salt and pepper.
- Serve topped with Parmesan cheese.
Classic Meatloaf
Ingredients:
- 1 ½ lbs ground beef
- 1 cup breadcrumbs
- 1 small onion, finely chopped
- ½ cup milk
- 1 large egg
- 2 tbsp ketchup
- 1 tsp Worcestershire sauce
- 1 tsp garlic powder
- Salt and pepper to taste
- Optional glaze: ¼ cup ketchup, 2 tbsp brown sugar
Instructions:
- Preheat oven to 350°F (175°C).
- Mix all meatloaf ingredients until combined, shape into loaf.
- Place in loaf pan or baking tray.
- Spread glaze on top if using.
- Bake 60-70 min until cooked through.
- Rest 10 min before slicing and serving.
